Delicious Steak Marinade
This simple recipe hits the mark, with the balanced balsamic and honey notes with a nice hit of garlic. I marinated two, ¾ pound steaks (1 ½ pounds total). This was plenty for four of us. For a Father’s Day treat, maybe Dad gets a steak all to himself!
½ cup balsamic vinegar
¼ cup stone ground mustard
¼ cup honey
¼ cup minced garlic
1/ Bring meat to room temperature a good hour before grilling.
2/ Blend ingredients in a non-metal container that will fit your steaks and serve as a marinating vessel.
3/ Place steaks in marinade for at least two hours, or up to eight hours.
4/ Grill to desired doneness.
Summer Potato Salad
This colorful potato salad is a hit at any gathering!
Serves 10-12
1 cup green onions, chopped
1 cup sour cream
½ cup mayonnaise
¼ cup white wine vinegar
4 teaspoons Dijon mustard
2 teaspoons honey
2 teaspoons salt
1 teaspoon ground black sugar
3 pounds of potatoes
1 cup celery, diced
1 cup red bell pepper, diced
1 cup blue cheese
Paprika
1/ Whisk ½ cup green onion and the next 7 ingredients listed above in a medium bowl. Cover and chill dressing (this step can be done a day ahead!). Keep chilled.
2/ Place all potatoes in a large saucepan and add enough water to cover by 1 inch. Sprinkle with salt and bring to a boil. Reduce heat to medium and boil until tender, about 10-15 minutes. Drain and cool to room temperature.
3/ Cut cooked potatoes into ½ inch slices and place in large bowl. Add dressing, peas, blue cheese, and toss gently. Cover and chill at least two hours.
4/ Sprinkle remaining green onions and paprika over the salad to taste.
